TYPICAL FRUIT/INGREDIENTS

Made using classic, tannin-rich French cider-apple varieties, such as Frequin Rouge, Bedan and Bisquet. Varieties that bring some acidity and fruitiness are also classically used to provide softness and balance.

NOTES

Traditional to the Normandy and Brittany regions of northern France, though the apple varieties now exist in small quantities around the world, having been planted by those who wish to replicate the style.

These ciders are made using the keeving method, retaining a natural sweetness, and are in-bottle conditioned, providing a natural sparkle.

CHARACTERISTICS

AROMA: ranging between fruity, spicy and funky

FLAVOUR: rich fruitiness dominates this style with soft bitterness and astringency

MOUTHFEEL: broad, layered and complex with a long aftertaste
